Creamy Lentils (Vegan)

This delicious side dish is made in 5 minutes and goes with a huge variety of meals. Try it on pasta, a Buddha bowl, on toast, or in a wrap! Go Ahead…Play With Your Food!

  • 1 398ml jar/can French lentils, drained (or soak and cook about 3/4C of dried lentils)
  • 1 Tbsp Olive Us Tuscan Herb Olive Oil
  • 2 Tbsp tomato paste
  • 1/2C water, vegetable stock (or coconut milk for extra creamy lentils)
  • 2 Tbsp nutritional yeast
  • ¼ tsp dried oregano
  • salt and pepper to taste
  • 1/4 tsp dried chili flakes (optional)

Combine all ingredients in a small saucepan or pot over medium heat. Stir until combined. Once heated through, remove the pot from the heat and serve immediately! Enjoy on toast, as a side dish, or on a Buddha bowl!
