UP standard (Ultra Premium) is reserved for some of the finest extra virgin olive oils in the world. As such, the UP grade exceeds all existing European, Italian, Spanish, Greek, North American, Californian, or any other standard for the grade known as extra virgin olive oil. These oils are single estate and each has a unique crush date, chemistry profile (ie. antioxidant level), and country of origin.
To ensure the freshest extra virgin olive oils, we alternate offering early harvest oils from both the Northern and Southern hemisphere, due to their opposite growing seasons.

This highly aromatic, vibrant infused olive oil is a must-have as a Mediterranean culinary staple! Fresh, bright, and delicious with many dishes.
From the Barbary Coast of North Africa, this Tunisian Baklouti pepper is rare and unique to this region. This fused oil is the only example of this fruity and spicy green chili olive oil in the world. Baklouti chili olive oil is made by combining fresh, early harvest organic olives with an almost equal ratio of fresh, whole green Baklouti chilies. The two, and only two, ingredients are then crushed together, mixed in the malaxer which fuses the fresh green essential oil of the pepper with the organic olive oil. Baklouti adds a savory, tantalizing kick to salsas, marinades, soups, grilled foods, vegetables and more. Caution: very hot!!
















Our handcrafted, Roasted Walnut Oil is made in California strictly following 150 year-old traditional methods. Slowly roasted to perfection, then expeller-pressed and lightly filtered. It adds a rich walnut taste to salad dressing, pasta, grilled meat, fresh baked pastries and makes a great bread dip. Shake up with equal amounts of our Raspberry Dark Balsamic, Red Apple Dark Balsamic or Blackberry-Ginger Dark Balsamic for an unforgettable vinaigrette! Drizzle with Maple Balsamic on ice cream!
Our California Roasted Almond Oil is expeller pressed and lightly filtered with an amazingly delicate nose and deep roasted flavour. Great for sautéing, drizzling, baking, dipping and as a vinaigrette. Pair with the Raspberry Dark Balsamic or Lemon White Balsamic condimento for an amazing vinaigrette.
