The Magic, Rich Taste and Old World Traditions of Balsamic Vinegar

Dark Balsamic Vinegar

Olive Us is proud to offer the highest quality traditional style condimento balsamic vinegar produced by one of the world’s oldest and most respected balsamic makers in Modena, Italy. A “must” is created as Trebbiano and Lambrusco grapes are crushed and cooked in copper kettles over an open wood fire in the “Traditional Style”. This time honored method of making balsamic naturally thickens and deeply caramelizes the grape sugar which turns a rich, dark mahogany-brown. According to the Solera method, the cooked “must” is then placed in a succession of very old, fired wood barrels (i.e. – chestnut, oak, cherry, mulberry, ash) each of which contain residual amounts of older balsamic. The wine “must” ferments and ages up to 18 years, continuing to gain complexity and richness as it transforms into thick, creamy and incredibly sweet vinegar.  Our balsamic vinegar is vegan and gluten free.  (Balsamic vinegar contains naturally occurring sulfites)

White Balsamic Vinegar

Our white balsamic vinegar is produced using the same type of grapes and method as the dark balsamic, except the grape “must” is gently cooked to avoid caramelization and preserve its light colour and then aged in new wood only. As with our dark balsamic vinegars, there is an incredible variety of flavours available and so much room for creativity and experimentation. Everyone here has their own favorite combinations to pair with yogurt, ice-cream, salads, fruit and in cocktails or mocktails. Share your discoveries! Pomegranate Dark Balsamic Vinegar

One of our favourite dark balsamics! This sweet-tart balsamic is rich in flavour and goes well with an abundance of meals!

This balsamic is a perfect match for grilled meats, like duck, lamb, pork, or beef and goes well in hearty tomato sauces too. One of our favourite marinades for steak combines equal parts Pomegranate Dark Balsamic with Garlic Olive Oil. This aged balsamic is amazingly complex, with layers of authentic espresso and dark roasted coffee!

Red Apple Balsamic Vinegar- Sold Out

This balsamic has an enticing aroma and a delicate, sweet apple flavour, fruitier than most balsamic vinegars. It’s a wonderful way of adding aroma and taste to complement any dish. Neapolitan Herb Dark Balsamic Vinegar

Premium White Balsamic Vinegar

Made with White Trebbiano Grape Must, our A Premium White Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena however it is not caramelized.

Furthermore, the grape must is aged in new wood barrels rather than barrels which were charred on the interior. The result is a crisp, “clean”, tart vinegar with a touch of sweetness and 6% acidity.

Extremely adaptable, it can be used with any E.V.O.O., as well as with our flavoured oils. Since it’s slightly more acidic than our other balsamics, A Premium is perfect for salad dressings and marinades that are a bit less sweet.
