As delicious as it it gorgeous… this beet hummus is a beautiful variation of our Olive Us Hummus!
2 – 3 small or 1 large beet (red, orange, or yellow), cooked
3 Tbsp Olive Us Fig Dark Balsamic (or Elderberry, Neapolitan Herb, or Black Cherry)
2 Tbsp Olive Us Dark Toasted Sesame Oil
1/3 C Olive Us Garlic Olive Oil (or Milanese Gremolata, Tuscan Herb, or Lemon)
3 cloves garlic, crushed
1 1/2 tsp Olive Us Lemon Twist Sea Salt (or Garlic, Scape, or Rosemary)
1 can chickpeas, drained
Cook beets using preferred method: Roasted (Roast in cubes for 12-15 at 400C), Steamed (Steam for 15-20 minutes or until tender), or store-bought pre-cooked.
Combine all ingredients in a food processor and blend until smooth or until no pieces of beet remain. Serve with sliced veggies, pita chips, or crackers, or use as a spread on sandwiches, paninis, or wraps!
