Lemon & Rosemary Grilled Halibut

A great treat to share with family or friends! Perfect alongside fresh, local asparagus, risotto or wild rice, and a fresh salad!

3 tablespoons Olive Us Champagne Vinegar
1 tablespoon fresh squeezed lemon juice
Zest of one lemon
3 tablespoons Olive Us Single Varietal Extra Virgin Olive Oil (or Rosemary, Leek, or Garlic)
1 tablespoon chopped fresh rosemary
Four halibut fillets or other firm white fish, (approximately 6 ounces each)
Salt and freshly ground pepper to taste

Whisk together the champagne vinegar, lemon juice, lemon zest, and rosemary. Add the marinade to a shallow dish. Place the halibut portions in the dish and generously coat with the marinade. Allow the fish to marinate, refrigerated for about an hour. Remove the halibut from the marinade, drizzle with olive oil, and season with salt and pepper.

Prepare the grill/BBQ to medium-high heat. Grill for 3 minutes per side or until just done through. Serve with local asparagus, wild rice, and a fresh salad!
