Spinach Blue Cheese Salad with Strawberries & Poppy Seed Dressing

A deliciously healthy version of poppy seed dressing without all the added sugar. Easy to create your own variation with fresh seasonal ingredients or what you have on hand!

Salad Ingredients:

16 oz baby spinach

3 cups fresh strawberries, sliced

6 oz. bleu cheese, crumbled

1/2 cup sliced or slivered almonds, toasted

 

Dressing Ingredients:

1/2 cup Olive Us Gravenstein Apple White Balsamic Vinegar (or 6 Tbls Gravenstein Apple & 2 Tbls Sicilian Lemon White Balsamic)

1  teaspoon Dijon Mustard

2-3 Tablespoons red onion, finely chopped

1/2 teaspoon sea salt & 1/4  teaspoon cracked pepper

1 Tablespoon poppy seeds

1 cup Olive Us Persian Lime Olive Oil (or single varietal EVOO, lemon, etc.)

Directions:

Put all dressing ingredients, except the olive oil, together in a blender or food processor and blend until smooth. With blender running, slowly drizzle in the olive oil. Set aside.

In a large bowl, toss together the salad ingredients, except the almonds.  Add the dressing and almonds. Toss to mix and serve immediately.

Serves 6
