We’ve enjoyed this salmon marinade so much that Ray fired up our Mongolian grill* to prepare samplers of this delicious salmon for hundreds of guests at the ‘Taste of the Okanagan’ street festival in downtown Vernon! For that event, we were fortunate to use beautiful salmon provided by Fisherman’s Catch in Vernon. Their fish is fabulous and makes this dish all the more wonderful!
Approx. 1 pound salmon steaks or fillets. Preferably nice quality salmon!
1/4 cup Olive Us Olive Wood Smoked Olive Oil (for marinade)
1/4 cup Olive Us Maple Dark Balsamic
2 cloves garlic, crushed
1 teaspoon sea salt (Olive Us Applewood Smoked Sea Salt is great here!)
cracked black pepper to taste
Olive Us Garlic Olive Oil for cooking
Marinade: Combine the Olive Wood Smoked olive oil, balsamic and garlic in a bowl and whisk together. Or put them in a jar with tight fitting lid and shake vigorously to combine.
Place salmon in a Ziploc type bag or dish and add marinade. Coat all sides evenly and close bag or cover dish. Place in fridge and marinade 1-2 hours.
Heat cast iron pan to med high and add Olive Us Garlic Olive Oil to pan. Sprinkle both sides of salmon with salt & pepper. Place salmon on pan or grill. Cook 4 minutes on one side then carefully turn over and cook an additional 3 minutes on the other side or until done. Adjust time based on thickness of salmon. Try not to overcook. Enjoy!
