Tex-Mex Tortilla Pie

A flavourful, fun main course served with a salad!  Easy to make a vegetarian version using cooked beans and/or rice instead of the ground meat.

Ingredients:

2 teaspoons Olive Us Olive Oil (i.e. – Garlic, single varietal EVOO or Chipotle for a little heat)

3 garlic cloves, crushed

1 large red onion or sweet onion, finely chopped (divided)

1 lb ground beef or turkey* (substitute with a mixture of cooked beans &/or rice to make it vegetarian)

1 small sweet pepper (red or orange), finely chopped

1 cup fresh or frozen corn kernels, cooked (or small can corn kernels, drained)

1 package Taco seasoning or 2 teaspoons Mexican Chilli powder & 1/2 teaspoon Olive Us Onion Salt

1-3 teaspoons Olive Us Baklouti Green Chili Oil (for additional heat, if desired)

1/2 cup fresh cilantro leaves, torn

 

4 soft flour tortillas

2-3 Tablespoons Olive Us Olive Oil (i.e. – Garlic, single varietal EVOO or Chipotle) to lightly fry tortillas

 

1 1/2 cups grated cheese (i.e. – cheddar, Monterey Jack, etc.)

1 large tomato, seeds removed & finely chopped

Directions:

Preheat oven to 350 degrees F.  Heat 2 tsp. olive oil in frying pan over medium-high heat. Add garlic and all but 2 Tablespoons onion to the pan. Cook for 3 minutes, stirring frequently. Add ground meat, break it up and cook about 8 minutes or until browned.  Add sweet pepper, corn and taco seasoning or chilli powder. Cook, stirring for 3 minutes or until pepper is tender.  Add Baklouti oil if additional spiciness is desired.  Add half of the cilantro, season with salt and stir to combine.  Remove from heat and set aside.

In large frypan, heat 1-2 Tablespoons olive oil on medium-high heat. When oil is warmed, carefully place 1 tortilla flat in pan and cook until lightly cooked (golden & crispy), then turn over and cook the other side. Remove from pan and place on paper towel. Repeat process, cooking all 4 tortillas one at a time. Add a small amount of oil to the pan as needed.  Don’t let pan get too hot or tortilla will burn.

Place one tortilla on a baking pan. Spread one third of the ground meat mixture over the tortilla.  Sprinkle 1/3 of the cheese over top. Repeat the layers two more times with remaining tortillas, meat mixture and cheese. Finish with a tortilla and sprinkle remaining cheese over top.

Bake for 15 minutes or until cheese is golden. In small bowl, combine chopped tomatoes, reserved onion & cilantro. Cut pie into wedges and serve with tomato mixture.  Great with Olive Us Guacamole too!
