Foil Roasted Potatoes or Veg

3 – 4 lb potatoes, washed and cut into 1/4″ slices (easy to adjust to amount you want)
1 medium onion (yellow or sweet onion), thinly sliced
3 tablespoons Olive Us olive oil*
Sea salt and cracked pepper to taste. We love it with Garlic Scape Sea Salt & Olive Us Smoked Cracked Pepper, but so many options and seasoning variations taste great!
*also works great with Olive Us Garlic, Tuscan Herb, Rosemary, Butter, Herbs de Provence, Dill olive oil too!
Potatoes can be cooked all together in one large foil package or in smaller packets.  Place foil on the counter (large enough piece/s to hold potatoes and fold over to close).  In a large bowl, place the potato slices and onions and toss together with 2-3 tablespoons olive oil to coat with oil.  Place potato and onions on foil package(s) and top with salt, pepper and/or seasonings. Fold each foil package to seal.
Grill:  place foil package(s) directly on grill at medium heat, turning occasionally, and cook approximately 30 minutes or until tender.
Oven:  Bake in the oven at 350 degree for 40-50 minutes or until done. They can also be cooked over a campfire, avoiding direct flames, for about 20-30 minutes.
Garnish with parsley, sliced green onions, etc.  Serve as is or try them with sour cream or dip (i.e. – half portions plain Greek Yogurt & Mayo mixed with Garlic Rub seasoning, such at Metropolitan Chef… available at Olive Us!).
Get creative with these packages of deliciousness!!  Add sliced carrots, yams, mushrooms, peppers, etc and adventure with some of Olive Us fused or infused olive oils and seasonings too!
