Lemon Chive Rooster Comb Pasta with Farmers Sausage & Balsamic Roasted Cherry Tomatoes

Here’s a quick, delicious family meal!  So good on a cold weekend night when you just need to cozy up to the fire and eat a hot bowl of pasta!

1/2 lb of Olive Us Pappardelle’s Lemon Chive Rooster Comb Pasta
Salt for water
2 Tbsp Olive Us Extra Virgin Olive Oil {EVOO}, Tuscan Herb, Koroneiki, etc.
1 cup cherry tomatoes, cut in half
1 zucchini, sliced
3 cloves garlic, roughly chopped
1 Tbsp Olive Us dark balsamic (Fig, Traditional, Neapolitan Herb)
1 link cured farmers sausage, sliced


1. Cook pasta according to directions on package until al dente, drain, and drizzle lightly with EVOO to prevent sticking.
2. Heat 2 Tbsp EVOO in a large pan over medium heat and add sliced zucchini. Saute until lightly browned and tender. Add tomatoes and turn up heat. Add garlic and stir. Turn off heat and add balsamic, stirring until evenly coated.
3. Saute farmers sausage until browned and crisped on the outside.
4. Toss pasta, veg, and sausage together. Season with sea salt and pepper to taste and enjoy!
