Freezing Herbs in Olive Us Extra Virgin Olive Oil

Savor the flavour of fresh summer herbs through the cold months of winter!

While plentiful, gather your favourite fresh herbs from the garden or local farmer’s market and make the most of them!  Wash and dry the herbs. Depending on how you plan to use them, the herbs can be kept in sprigs, leaves or chopped. They can be frozen as a single type of herb or combined to create your favourite blends*.  Harder herbs, such as rosemary, thyme, oregano and sage tend to work best using this freezer method of storing.

Using ice cube trays, fill each empty cube 1/2 – 2/3 full with your choice of herb(s).  Pour Olive Us extra virgin olive oil (EVOO) into the cube to cover the herbs. Cover the tray with plastic wrap and freeze overnight. The next day, remove the cubes and store in ziploc type freezer bags or freezer containers.  To avoid surprises, remember to label them!

When you’re ready to use them, take out one or more cubes of the frozen EVOO and herbs and use as your oil for sautéing, roasting veggies, for soups, stews, casseroles, etc.

*Here’s a couple of suggestions for herb blends:

Herbes de Provence – marjoram, thyme, rosemary, savory and sometimes lavender

Bouquet Garni – bay leaf, parsley & thyme
