Awaken your taste buds with the taste of fresh strawberries!! As with many salads, this one is super versatile so you can change it up with the addition of cherry tomato halves, pieces of avocado, nuts, or more! The bocconcini can be marinated in Olive Us Sicilian Lemon White Balsamic or traded out for feta cheese if you prefer. No limits on this one!!
2 tbsp Olive Us Basil Olive Oil or Olive Us Lemon Agrumato Olive Oil
1 tbsp Olive Us Pomegranate-Quince White Balsamic
1/4 tsp sea salt
2 cups fresh ripe strawberries, quartered
1/2 small red onion, sliced into thin strips
1/2 cup mini bocconcini or pearl bocconcini
4 sprigs fresh basil, torn
Optional: Sprinkle of nuts (i.e. – pine nuts, walnuts, etc), cherry tomatoes (cut in half), avocado pieces, etc.
In a jar or container with tight fitting lid, shake together the olive oil, balsamic vinegar, and sea salt.
In a medium bowl, combine the strawberries, bocconcini, red onion, and basil. Add the dressing and gently toss together. Mix thoroughly, top with pine nuts if desired. *There are many dressing combinations and salad ingredients that work great with this simple salad.
