1/4 – 1/2 sweet onion, thinly sliced
1/2 bunch kale, ribbed
1/4 cup Craisins
3 Tbsp Olive Us Lemon Fused (Agrumato) Olive Oil*
2 Tbsp Olive Us Black Currant Dark balsamic*
2 tsp fresh lemon juice
1/4 cup Parmesan cheese or Grana Padano, grated
2 tsp Gravelbourg mustard or Dijon
Sea salt and pepper to taste
Soak the onion in Olive Us Cranberry Pear white balsamic for 10-20 minutes (optional, but wonderful!). De-rib the kale, keeping both the kale leaves and the ribs. Tear kale leaves into bite size pieces in medium-large bowl. Mince the kale rib and throw it all in a bowl with the kale, Craisins, and onion. Shake Olive oil, balsamic, lemon juice, mustard, salt, pepper, and 1 tablespoon of the Parmesan in a jar with a tight fitting lid. Dress the salad and toss with remaining Parmesan . Voila!!
