This delicious side dish is made in less than 15 minutes and goes with a huge variety of meals, not to mention on top of a crispy piece of baguette. Not a fan of goat cheese? No problem, this can be made with many other cheeses including vegan cheeze! Go Ahead…Play With Your Food!
- 3 bell peppers, cored and cut in thirds
- 2 Tbsp Olive Us Garlic Olive Oil (or Dill, Tuscan Herb, Basil, or Single Varietal EVOO)
- 6-9 Tbsp goat cheese
- 2 Tbsp Olive Us Fig Dark Balsamic (or Maple, Pomegranate, or Traditional Dark Balsamic)
- sprinkle of salt and pepper
Preheat the oven to 375F
Toss the peppers with the olive oil. Roast peppers for 4-5 minutes on the grill, or on a sheet pan in the oven at 375F for 7-8 minutes until fork tender and lightly browned. Lay the peppers out on a sheet pan and stuff each with 2-3 tsp of goat cheese. Drizzle the balsamic over top, and sprinkle with salt and pepper. Bake for 4-5 minutes, until the cheese has warmed and the balsamic is bubbling slightly. Serve while hot and enjoy!
